Last night I made baked parmesan chicken, gluten free! It was really really good. Definitely a keeper.

Here's the recipe...

Ingredients:

- Skinless chicken breasts (I used 3)
- 1/4 cup of gluten free all-purpose flour
- 1/2 cup of grated parmesan cheese
- 1/2 tsp of salt 
- 1/2 tsp of pepper
- 2 teaspoons of paprika
- 1/2 cup of gluten free bread crumbs
- 1 egg
- 2 tablespoons of milk
- 1/4 cup of butter melted 

Directions:

- Set oven for 350 degrees
- Spray baking dish with cooking spray
- Combine flour, bread crumbs, salt, pepper and paprika in a bowl
- In separate bowl, combine milk and egg (whisk together)
- Dip the chicken in the egg mixture then dip it in the flour mixture
      ** make sure you cover the whole chicken with the flour mixture
- Place chicken in the baking dish and pour melted butter over the chicken (I also sprinkled some parmesan cheese on top)
- Bake for 1 hour and 20 minutes ( just make sure chicken is cooked all the way through and the top is browned!)
